Brut Nature Gran Reserva Barrica

Origin: Made from the indigenous grape varieties used in the Penedès area: Parellada, Xarel·lo y Macabeo with the contribution of the foreigner Chardonnay. This last one along with Xarel.lo, have fermented separately in French 300 litres oak barrels. All are hand picked from the best suited vineyard sited in Alt Penedés.
Process: After the final blend, selected yeasts are added and the wine is bottled and sent 15m below ground to our cellars. At a constant temperature of 14ª it is aged for a minimum of 24 months, during which time a slow second fermentation takes place. Finally when the cava is ready the lees are removed through the process of "degüelle". This Dry Brut Nature Gran Reserve does not contain any sweetening liqueur. It's unique bouquet is achieved purely through the blend and the ageing period in bottles.
Appearance: Pale yellow with greenish reflexion, with an abundance of fine bubbles forming a persistent attractive crown on the rim.
Nose: A very complex product. It has a wide range of aromas. It takes care of the fruit variety characterized by green apple, hay honey and citrics. Thus it combines with the toasted and toffee aromas gained during the oak ageing period.
Palate: Light and fresh, but with a well balanced acidity. Smooth smoked palate and grassy, bringing structure and harmony. Overall, a great product.
