Origin: Made from the three indigenous grape varieties used in the traditional Cava blend: Parellada 42%, Xarel.lo 33% and Macabeo 25%. Parellada, recognised as the finer of the three is grown on the upper slopes whereas Xarel.lo and Macabeo are usually found on the lower levels. All are hand picked from the best suited vineyard sites in Alt Penedès.
Process: After blending, selected yeasts are added and the wine is bottled and sent 15m below ground to our cellers. Here it is aged for an average of 30 months, during which time the second fermentation takes place. Finally when the cava is ready the lees are removed through the process of "degüelle", and the "Licor de Expedición" is added, giving that final unique bouquet to our cavas.
Appearance: Pale, bright clear golden yellow, with fine persistent bubbles that form a crown on the rim.
Nose: Clean, yet subtle nose of exotic fruits, with an underlying note of toasted almonds.
Palate: Dry, with balanced acidity. Rich and full in flavour it has a good fruit intensity with an underlying note of toasted almonds.
