Origin: This Cava is the result of 50 years of dedication and experience acquired by Ezequiel Ferret Olivella since he founded the Cavas Ferret winery in 1941. Made from the principal 3 cava grape varieties, Parellada, Xarel.lo and Macabeo. The principal great variety is Parellada, which is recognised as the finest of the three and is grown at 800 metres above sea level, where there days are warm and the nights very cool. This extreme difference of temperatures encourages a slower development of aromas and flavours in the grape, resulting in a finer more delicate wine. This cava is only produced in exceptional vintages.
Process: Harvested in 1998 it was bottled in 1999, before undergoing it's second fermentation in bottle at 15m below ground in our cellars. After a minimum of 48 months of ageing on racks the cava goes through the process of riddling in the traditional pupitres in order to push the yeast sediments to the neck of the bottle. It is then stored upside down until consumption. No sweetening dosage was added to this Brut Nature Gran Reserve. Its unique bouquet is achieved purely through the blend and the ageing period in bottles.
Appearance: Bright yellow straw in colour with abundant tiny bubbles that form a long lasting crown around the rim.
Nose: Clean, quite intense nose. Rich, slightly toasted bouquet with a delicate underlying fruit aroma.
Palate: Very lively on the palate. Round and complex in the mouth with exotic fruits masked by a rich toastiness. The aromas seem to linger on the palate forever.
